CHOCOLATE BLACK BEAN COOKIES
Contributed by Kevin Connelly. Recipe from The Great Vegan Bean Book. These are easy to bake and do not taste like beans. Everyone likes them. 1 ½ cups whole wheat pastry flour ½ cup unsweetened cocoa powder 1 tsp baking soda ¼ tsp salt 1 ½ cups cooked black beans, or 1 can 15 oz, rinsed and drained 1 Tbsp ground flaxseed mixed with 3 Tbsp warm water 1 cup nondairy milk ½ cup brown suger ½ cup granulated sugar 1 tsp vanilla extract 1 ½ cups vegan chocolate chips Preheat oven to 350°. Line a cookie sheet with parchment paper. In a large bowl, combine the flour, cocoa, baking soda and salt. In a food processor, add the black beans, flaxseed and water mixture, nondairy milk, both sugars, and vanilla. Blend until smooth. Add the wet mixture to the dry in the bowl along with the chocolate chips and mix with a wooden spoon until combined. Scoop the cookies using a cookie scoop or 2 Tbsp utensil onto the sheet and bake for 10 to 12 minutes (10 works for me) until look dry on top and spring back when lightly touched. |
